Lavender simple syrup brings the summer festivals home.

Three cups of sugar, two cups of water, and one handful of lavender buds. Different varieties of lavender have different flavors - try a few to choose your favorite. We especially enjoy the French-Hybrid Goodwin Creek Gray cultivar for our simple syrup.

Dissolve three cups of sugar into two cups of water, stirring until the sugar no longer appears as grains at the bottom. Add a handful of lavender buds and bring to a simmer. Remove from heat and allow to steep for 30 minutes. Pour through a sieve or strainer to separate the cooked lavender buds from the syrup, saving the syrup in a glass jar. Store, tightly sealed in the refrigerator.
